"Valli del Latte"

"Valli del Latte" (Milk Valleys): this very simple and evocative name refers to a production area that is completely endemic to the Stura Valley, and is obviously characterised by breeding activities and the production of milk and dairy products. It is a complex of farmhouses that have kept alive over the decades a long and little-known tradition of milk production in Liguria. In fact, people normally think of Liguria as a land stretching out towards the sea. Certainly its traditions related to fishing and, above all, seafaring are well known. Equally we know of agricultural productions with a strong local connotation and world renown, just think of the basil and the resulting pesto. But there is also a 'third Liguria': that of breeding. It is no coincidence that it has given its best in this corner that overlooks Piedmont and its plains. It has certainly found a home here and has been able to produce the best of the 'bruna alpina', the main breed of cattle for milk production in the area. Visiting the breeders and hearing their stories is a truly enjoyable experience. You come into contact with a reality that is still "other" than city life. Slower rhythms and in step with nature, but not without sacrifice. The cows do not go on holiday, and they do not know Sundays. But they do give very good milk, which the commercial wisdom of modern breeders knows how to market in a consortium form, and which also allows on-the-spot tastings of delicious fresh dairy products.
