Ancient bakery

In the heart of Triora we find an ancient bakery, well preserved and also set up with an environmental reconstruction. It reminds us of bread: man's main source of survival. It is not always made of flour, but in Triora, the "granary of Genoa", it is more often made of wheat than other cereals. In the peasant civilisation, bread production followed a very different path from the one we are used to. Generally, each family kneaded its own bread. They would get the flour and make the shape. Then it was time to bake it, and that's when the 'collective' (but privately run) bakery came into play. Obviously, there was a risk that the loaves might be confused. So each family would 'mark' the bread with its own particular symbol, so that after baking there could be no doubt as to which family it belonged to. The function of the bakery was obviously very important, so much so that it was regulated by the community statute, which states in Article 67: "The bakers and bakerywomen, that is, the bakers and bakewomen, must bake well the bread and astrochee, or, as it is commonly said, the pies and focacce that are brought to their ovens, first counting the loaves that are brought by individuals, and returning them well cooked and in the number delivered. Whoever fails to do so shall pay a fine of thirty money for each time and shall pay triple the amount of damages; for which the owner of the bread or someone in his family who is fourteen years of age or older shall be sworn to, provided that both are of good repute. This does not derogate from what was said in another chapter. Half of the fine shall go to the municipality, and half to the complainant".
